We are a local, family owned, business based in Houston, Texas. We are owned and operated by husband and wife couple, Shane and Megan Young. Shane functions as the company's Chief Experimentation Officer and Megan holds the position of Chief Flavor Officer. Together, with their years of culinary knowledge, they have brought about a unique line of products that blend traditional concepts of flavor with bold and unique ideas that allow for vast experimentation and fusions.
Shane is a Texas native, born and raised on the Southwest side of Houston. He spent the majority of his childhood growing up in the Stafford/Missouri City (Sta-Mo) area before moving out to Sugar Land and then spending his early adult life in the Fondren/Braeswood area. Shane grew up with a passion for music and food. Unfortunately, his early years of culinary experimentation led to quite a number of food faux pas. But, as the years went on, he continued experimenting with all kinds of different flavors. Combining sweet & spicy. Salty & earthy. Fruity & umami. And he started gaining popularity amongst his peers for his ability to churn out delicious meals. In 2012 Shane started dating his now wife, Megan, another Texas native whose family can trace its Texas route all the way back to the mid 1800's. Megan was quite the accomplished home cook. She had been trained by a number of generational mentors in her family and learned a number of southern cooking styles as well as receiving more formally structured training in culinary arts. Her passion for food led her to attend, and graduate Suma Cum Laude, from the Conrad Hilton College of Hotel and Restaurant Management. Together, Shane and Megan would spend their off days playing vinyl Jazz albums on the turntable while they spent hours cooking a full 5 course meal, all for themselves. It was during these extensive cooking sessions that Shane started pondering how to make everything truly from scratch. This kicked into high gear for both Shane and Megan when they toured Europe in 2016 and realized just how much of the food over there is handmade, truly from scratch, and how much better the same kind of food can taste. It was a simple snack in the street of Amsterdam that sealed the deal for Shane, it was a snack. A simple, common, every day snack. But made in an entirely different way from anything he had ever had before. Potato chips.......made from freshly cut Dutch potatoes, double fried in duck fat, dressed with paprika, and served with a ketchup like tomato sauce that was also handmade from scratch. That put Shane on a path from which there was no deviation. He wanted to make everything from scratch. But truly from scratch. Not just the primary ingredients.....but the ingredients that made the ingredients as well. His first true big hit in this venture was a 4 cheese smoked dauphinoise. He had previously purchased smoked cheeses and used them to create the dish. But, he was driven to go even farther and thought to himself, "What if I could control the flavor of the smoked cheese and make it exactly the way I want it to be so that the dish, and every component of flavor, ends up exactly the way I want it to be?" And so, he did. He smoked cheeses for the dauphinoise. He smoked fruits for sweet additions to savory dishes. He even started a garden from which he would harvest his own cayenne and jalapeno peppers to smoke and make his own smoked chiles. Now, several years later, Shane and Megan have combined all of their knowledge and experience from obtaining ingredients at the source and carefully perfecting the art of manipulating flavor exactly the way they want to......and the inevitable result is Third Coast Pitmaster. An outlet for dry rubs, sauces, all purpose seasonings, and even specialty craft seasonings unlike any other. Third Coast Pitmaster is a place where Shane and Megan can take their experiments and adventures in flavor and share them with others. Shane and Megan currently live on a 5 acre ranch on the north east side, just outside of Houston. Their property, rich with native post oak trees fit for smoking and soil excellent for cultivating. They currently grow a few of the ingredients used in the dry rubs sold by Third Coast Pitmaster. And, as they continue on their path of turning fresh plants, fruits, and vegetables into delicious rubs, sauces, and seasonings, they hope to share a little bit of that passion and pride with you with each and every product they sell.
